So before Tastespotting went kaput (its back, by the way - hooray!) I skimmed a recipe for homemade cheese. Naturally, it was such an easy recipe that I didn't copy it, and then the website went away and I can't find it now. BUT, I couldn't resist trying it anyway. I started a batch last night and will see how it tastes when it is done.
My version:
One large container plain yogurt (I wanted Greek, but where I live? Hard to find)
zest and juice of one lemon
1 tablespoon minced garlic
a whole wad of fresh chives from my garden, minced
pinch of kosher salt
I put the whole thing into a double layer of cheesecloth and dangled it from a wooden spoon hung across the top of a deep bowl. It now resides in my fridge, draining off all the liquid. I drained it off this morning before work and will do so again tomorrow morning. Tomorrow night - crackers!

You could make your own yogurt! I have been doing that lately, and it comes out much closer to greek than the store bought stuff does.
Well then you must send me your recipe!

UPDATE! When I checked it last night, the cheese had stopped draining, so I scooped it out and promptly plopped a dollop on a cracker. All I can say is....damn. Damn, that is some good, spreadable cheese. And dammit, I left it in the fridge this morning instead of bringing it to work with me to snack on. Damn.
Hmmmm, what flavors can I try next??? I have fresh jalapenos in the garden....hmm....
